David Zecchini grew up in Rome, the son of a hairdresser whose clients included runway models. He said he was accustomed to traveling the world and eating in the best restaurants.

Zecchini has, in his words, “reversed the coin.”

“I know how to be served,” said the 38-year-old Zecchini, the words spilling out of his mouth in a rapid-fire Italian accent. “Now, I need to serve people like I was at the table.”

Zecchini is the driving force behind DZ Restaurants Inc. in Saratoga Springs, which owns Chianti Il Ristorante at 208 S. Broadway, Forno Bistro on 541 Broadway and, until recently, Mare Ristorante at 17 Maple Ave.
